Or you can use natural yoghurt in a pot instead, roughly a teaspoon for each jar you are making and add to the liquid, stir well etc and pour into jars.

I’ve tried it with yogurt rather than a starter but it went off a lot more quickly. Perhaps I was doing it wrong. I always use full cream milk though and the results are very good and creamy.

Wife has started making kefir, and she makes her own sourdough bread from a starter culture that she maintains. I eat the bread, not the kefir, my gut does better without ! Kimchi is a tough one, you’d probably be able to find it in Paris, Lyon and the large metropolitain areas from specialist korean food providers, but outside of that in the countryside, it seems to be pretty much unheard of. Sauerkraut you can get pretty much anywhere if you search for it, albeit not always freshly made.

What happend Angela, mold or nasty taste? Did it turn to cheese?

Mrs W makes it with yogurt IIRC 1 pot of it to +/- 1 litre of milk, she double heats it, never had a bad one.

That’s what I do too. Heating to boiling point - and rinsing the container with boiling water - is essential.

Mrs W. just pushes the heating button again when the first heat secession has finished, make the yogourt thicker too.

Yes if you are using fresh milk. No if you are using UHT.

I can’t remember what sort of off it went @corona but I was using yogurt from a previous batch so that may have been the problem. I get 100% success and a thick, creamy yogurt every time with a starter and the starterhas the advantage of storing well so I can make a batch whenever I feel like it.

Kimchi is certainly available in our nearest Grand Frais @RicePudding

Lidl were doing fresh sachets of sauerkraut this week in their german food section of the chiller cabinets. Its a many countries promo currently with stuff from all over europe and N.Africa.

For proper gut-friendly food the sauerkraut needs to be raw and should be eaten raw.

As a slight aside, does anyone else find it a bit weird that some supermarkets are doing ramadan promos that include lots of food stuffs ?

But don’t the people who abide by this eat big meals in the evenings? If so, they still need to shop. I know my son has had people faint in class from not eating anything during this period of fasting.

Don’t know about that, had to stop eating it as it makes me fart. :poop:

But, I think in general less is eaten, although muslim friends say they don’t tend to lose weight during Ramadan so maybe not. Also, supermarkets are generally open during the daytime and trying to tempt fasting people to go to a supermarket overflowing with food I do find a bit weird. Although of course you still have to shop when fasting, it’s the temptation bit I find a bit distasteful.

I think that one is Sue, unlike most jars in supermarkets that pasterise it to the point of no point as you said.

They must be eating some dodgy stuff, I do 3 day fasts, just water and black coffee and have never fainted or felt faint.

Thats not you :wink: thats your gut bacteria fermenting it or not if you dont have the right bacteria.

I think its mainly young teenage girls who obviously need nourishment at certain times of the month especially foods that contain iron and protein.

When they fast they do not even sip water never mind coffee!

I can concur with this statement. Our local BioCoop does very good Kimchi, though not cheap.

Not all BioCoops are equal, as they source local stuff whenever they can.
